I have both systems and agree with 10spro. With multi-platform games, you won't really see much difference (and, in fact, the 360 sometimes runs more smoothly). But the PS3 exclusives can be mind-blowing. MLB 09 is the best-looking sports game I've ever played, and the Uncharted games feature some of the most gorgeous graphics you'll ever see. Even though I thought Killzone 2 was meh as a game, it also had incredible visuals.
On top of that, the PS3 is simply a better built system. Quieter, more reliable, and the built-in BluRay player is still a bargain even as BR players have dropped.
Having said that, I don't know if I'd make that trade unless you really think your Elite is on the downward slide. The 360 is still the better gaming platform by far if you want to play online, and I think the controller is considerably better, especially for FPS and racing games. If you want BR and online multiplayer isn't that big of a deal to you, then I'd go PS3. But if you plan to play online a lot, keep the Elite and just get a separate BR player. Uncharted 1 & 2 are amazing, but they are also short and don't justify the cost of a new system alone.
It's a tough decision to make...which is how I wound up with both systems.
