L trigger - Brake
R trigger - Throttle
A - Upshift
X - Downshift
B - Rearview mirror
Y - Change camera view
L thumbstick - Steer (left/right); Tuck in (up); Stand up (down)
R thumbstick - Shift gears (up/down)
Black & White buttons - Skip music track
Kruza, thanks for the advice on the setup. This should help me concentrating on leaning the bike properly and hitting apexes rather than worrying about which brake I'm using.
do I NEED to learn separate front and rear braking to get better at this game or is that just a matter of preferance?

After switching to left trigger braking method, I found that I kept the bike on the track a lot better than when I was worrying about front/back braking.

At this point, I gain more time by keeping the bike upright than I would from any advantage from the advanced braking model.
